Give your leftover idlis a makeover with this spicy, crispy snack. Perfect for tea-time or lunchbox treats, these masala-fried idlis are quick to prepare and deliciously satisfying.

Ingredients:

  • 6 Idlis (preferably refrigerated or leftover)
  • 1 Tbsp oil
  • ½ Tsp mustard seeds
  • 1 Sprig curry leaves
  • ¼ Tsp turmeric
  • 1 Onion finely chopped
  • ½ Capsicum chopped (optional)
  • ½ Tsp sambar powder or red chilli powder
  • Salt to taste
  • Coriander leaves for garnish

Instructions:

  • Cut the idlis into bite-sized cubes.
  • Heat oil in a pan. Add mustard seeds and let them splutter.
  • Add curry leaves, turmeric, and chopped onion. Sauté until golden.
  • Add chopped capsicum (if using) and sauté for a minute.
  • Add idli cubes, sambar powder, and salt. Mix gently until coated.
  • Stir-fry on medium flame until the idlis are crisp and golden.
  • Garnish with coriander leaves and serve hot with coconut chutney or just as is.
