A power-packed South Indian meal. The rustic, protein-rich adai pairs beautifully with creamy vegetable avial for a hearty and traditional dish.
Ingredients:
- Thaayar adai batter
- 1 Cup mixed vegetables (carrot, beans, ash gourd)
- ½ Cup grated coconut
- 2 Green chillies
- 1 Tsp cumin seeds
- 1 Cup curd
- Curry leaves
- Salt and coconut oil
Instructions:
- Cook vegetables with salt.
- Grind coconut, green chilli, and cumin.
- Mix with cooked vegetables and curd. Temper with mustard seeds and curry leaves.
- Make adai on a hot tawa and serve hot with avial.
